Cooking Creations

Part of my goal this month is to try out new recipes from my new cookbooks.



This picture shows two recipes. I made scrambled tofu for the first time. I was scared to do it because all the tofu I have tried has been really gross. But I decided to give it the benefit of the doubt and try it, and it was really good. My kids thought they were eating eggs, so that works for me! The other recipe was pumpkin bread. (The ketchup is also home made.)

I tripled the recipe and made 6 loaves and gave some of them away to friends. It turned out so well that people have requested the recipe.



It's hard to photograph coffee cake... I made the recipe exactly like the book said to, but I added 1/2 cup spinach puree and 3/4 c blueberries. The kids have an aversion to green food and I got fed up with it so I'm adding veggie purees to everything they eat this month so they will get used to green food. When I handed this to Kaia she stuck out her tongue and was grossed out, but once she ate a bite she loved it. You can't taste the spinach at all.



This is a mock tuna sandwich. It's made with chickpeas, hijiki (form of seaweed), onions, carrots and other ingredients. It's really very good. It's not very fishy, but has a touch of it, just enough to satisfy the craving for a tuna sandwich. I haven't had tuna in about 6 years because Chris and I weren't thrilled with the fishing practices, not to mention the mercury. Needless to say I have been missing the occasional tuna sandwich, this really hit the spot. I used Genesis 1:29 bread too, which I LOVE.
